The food we eat!

As a kid growing up in Lefor, North Dakota I fondly remember the fairs held every fall. The high point was the dinners the women prepared of Paprikash and Beef Noodle soup. There were alway a number of people from surrounding communities that came for the great cooking.
Simple, quick, inexpensive and hearty! Paprikash and bread is a wonderful meal, especially when the cold weather rolls around.
| 2 lbs. beef stew meat cut in 1 inch squares (chuck, Swiss, round) |
| 2-3 medium yellow onions sliced into thin rounds|
| 7 average sized white potatoes peeled and cut |
| 3 TB. vegetable oil |
| 2-3 TB. Hungarian Sweet Paprika (see note below)|
| 1/8-1/4 tsp. Cayenne red pepper (optional!) |
| 2 Bay Leaves |
|1 TB. Salt |
| 7 Cups water |
|freshly ground black pepper to taste |
Heat a large pan over high heat, add 1
TB. vegetable oil, swirl to coat. When the oil is hot, add
onions, cook until lightly browned, about 5 minutes, stirring often.
Remove onions to a soup pot.
Add another TB. of oil. When hot, add half of
the beef. It is important not to crowd the pieces, so the browning is best
done in two batches. Brown beef for about 5 minutes (it doesn’t have to be
dark brown on all sides), add 1-11/2 TB. Paprika, stir to coat beef and somewhat fry the paprika for
about one minute. Remove beef to soup pot, scraping up paprika bits. Heat
the final TB. of oil, when hot, add the second batch of beef, brown , add
the rest of the Paprika,fry an extra minute, remove to soup pot.
Add 2 cups of water to the soup pot. Make sure to pour 1/2 cup into the used fry pan, scrape up the browned bits, and pour into the pot. Bring the soup to a simmer, and simmer for one hour.
Add 5 cups of water to the soup pot.
Add potatoes to the soup.
Add 1 TB. salt. Start with 1 TB. but taste before
serving and adjust if necessary.
Add the Bay leaves.
Raise the heat to medium (soup should not quite boil) and cook for another 45 minutes.
Serve with a simple salad, and, this is very important, fresh crusty white bread or rolls.
